HACCP is a "hygiene package" of five laws adopted by the EU that aims to merge, harmonise and simplify hygiene requirements which are scattered over a number of directives .
It has been developed to identify the “critical points” in a process where food safety hazards could arise and introduces steps to prevent the hazards occurring. The new hygiene laws have been applicable since 1st January 2006.
